Listening for First Crack

Listening for First Crack

Dorothy — our 1987 Probat — is louder than any modern roaster, and that is her greatest feature. First crack is not a data point on a laptop screen; it is an audible event, like ice shifting on a lake, and when you roast by ear you cannot help but roast by attention.

We log everything: charge temperature, turning point, the color shift at drying, the smell at 150°C. But the profiles are guides, not scripts. Humidity, bean density, the mood of the drum — every batch asks small questions, and crack is where it asks the important one.

People sometimes romanticize this. It is not romance; it is quality control by a human who is present. A roaster watching a graph can step away. A roaster listening to a drum cannot.
